Situation The quality of the CHATEAU PIQUE-SEGUE wines is largely due to the exceptional soil conditions and climate, of a white "argilo-calcaires" subsoil, rich in "tuff", situated on the slopes of the last hills of the Libournais, between St Emilion and Bergerac, just to the north of the Dordogne river. This “terroir” giving full expression to the varieties of red Merlot and Cabernet vines.
Vines 70 % Merlot, 20 Malbec, 10 % Cabernet Sauvignon.
Wine making After careful surveillance of the different parcels, the harvest is gathered at its full maturity and taken to ferment in individual vats at controlled temperatures.
After the initial fermentation process, of between 8 and 10 days, the wine remains on its lees for a further 10 days or so. The temperature is maintained at about 30°, to extract mildness, maximum colour and flavour. Once the fermentation process is complete (i.e. the malique acid has become lactic) micro-bubbles of pure oxygen are brought gently to the wine in order to reach the required structure.
Once assembled, after about 14 months of maturation, the wine is prepared for bottling.
The characteristic of the Pique-Sègue red wine is a full sensation of summer berries, cherry, raspberry and black current, with a soft and long taste in mouth.
